Twice-Baked Sweet Potatoes

Ingredients
| 4 8oz. sweet potatoes |
1/4 cup parmesan cheese |
| 1 tbsp. butter |
1/4 cup sharp cheddar |
| 1 tsp. salt |
1/4 tsp. pepper |
Bake sweet potatoes @ 425o for 45 minutes. Scoop out flesh, leaving 1/4 inch shell. Mash flesh with remaining ingredients. Spoon into shells & bake 20 minutes or until shell is crispy.
