Ingredients
- 1 cup chopped onion
- 1 can cream of chicken soup
- 1 cup chopped celery
- 1/2 cup milk
- 3 tbsp. canola oil
- 1/3 cup chopped roasted red sweet pepper
- 1 4 oz. can sliced mushroom
- 1 8 oz. can sliced black olives
- 1 tsp. dried basil
- 4 cups cooked chicken (cubed)
- 1 8 oz. package elbow macaroni (cooked & drained)
- 1 1/2 cups shredded cheddar cheese
- 2 cups cottage cheese
- 1 cup dried bread crumbs
- Grated parmesan cheese

In a skillet, saute the onion & celery in oil until tender. In a large mixing bowl, stir together the remaining ingredients (except parmesan cheese & bread crumbs). Add onion & celery mixture. Pour mixture into greased baking dish. Sprinkle top with bread crumbs & parmesan cheese. Cover & bake @ 350° for 55-60 minutes. Serves 8. |
